Any way I can load just the environment and no landscape?

The only way is to make a big model and use that as your environment so you don't see the landscape.

How about loading a flat terrain template and being able to make the 'grass' invisible or a glass material without reflection?

The closest you can get is to use the white landscape, the seventh icon I believe.

We can of course create an option to remove the hide the terrain. But adding a big sphere that hides it might help.
